For years and years, my family and I have eaten tacos every Monday night, although the way we have always eaten them is the not-so traditional way.
Instead of using regular taco shells or tortillas, we use Tostitos scoops. The scoops are an alternative way that allows you to eat the tacos in a bite-sized fashion.
In addition, the seasoning creates the perfect blend of the limed flavor chicken which adds a flavor filled twist.
These bite-sized taco servings will make you think twice about how you eat tacos going forward. It is the perfect Mexican dish for any summer night.

Ingredients:

1 package chicken breast with rib meat

2 packages boneless skinless chicken thighs

5 limes
-
5 packets of taco seasoning
-
3 tablespoons of cut cilantro

Salsa
-
1 bag Tostitos scoops
-
Sour cream
-
Large bowl
-
Grill
-
Manual juicer
Directions:

Take all chicken out of packaging and gently wash each under water.

Dry off each piece of chicken with paper towels or kitchen towel.

Place all pieces of chicken in large bowl.

Pour 3 packets of taco seasoning in large bowl.

Mix with hands until all pieces of chicken are fully covered in taco seasoning.

Roll limes then cut in half and squeeze each lime in manual juicer.

Pour lime juice in large bowl and mix juice until all pieces of chicken are soaked.

Drape towel over bowl and refrigerate for 30 minutes to marinate.

After 30 minutes, seer pieces of chicken on grill until cooked.

Pour meat into pan on stove and chop it up.

Pour 2 packets of taco seasoning on meat.

Let cook on stove (high setting) for 20 minutes.

Pour Tostitos scoops on plate (all facing in up direction).

Serve chicken meat into each scoop.

Add salsa, cilantro and sour cream on top of meat (or your choice of toppings).
